I’m creating this page to share my favorite recipes. There are no ads to sort through. These recipes come from my heart and are from many sources, including my own creativity. Some are my grandma’s or are from her oldest recipe books. All photos were taken by me. ENJOY!
Watermelon Salad
1 mini watermelon or equivalent amount
1 cup of sliced strawberries
1 cup of chopped feta cheese
a handful of your favorite herbs, especially basil and spearmint
2 tablespoons balsamic vinegar or Italian condimento (syrupy sweet sour balsamic)
1/3 cup olive oil
salt and pepper to taste
Cut up a mini watermelon or equivalent amount of watermelon into bite sized chunks. Add strawberries, feta and herbs. Drizzle balsamic and olive oil over salad ingredients. Add salt and pepper. Toss and serve.
Curried Cauliflower Salad
Half a head of cauliflower
2 T olive oil
salt and pepper to taste
½ C olive oil based mayonnaise
1 t curry powder
1 large clove garlic, crushed or minced
½ lemon, squeezed
A handful of fresh, chopped herbs
Break cauliflower into bite-sized pieces. Spread on parchment-lined paper on a baking sheet. Drizzle with olive oil and salt and pepper to taste. Bake at 400 F for about 8-10 minutes or until you can stick a fork in a piece of cauliflower, but there’s a little resistance. Whip up dressing while cauliflower is baking. Whisk together mayo, curry powder, garlic and lemon juice. Pour cauliflower in a bowl and add dressing. Stir until the cauliflower pieces are coated with dressing. Sprinkle fresh chopped herbs over the salad.
